Jeanine Lenway's Goulash

A straightforward one-pan-ish goulash: browned meat, tomato sauce, and macaroni finished together so the pasta picks up the seasoning.

Ingredients

  • 1½ cups macaroni
  • 1 onion
  • 1 lb hamburger or meat substitute
  • 1 can stewed tomatoes
  • 2 cups tomato juice
  • 2½ cups water
  • 2 tablespoons chile powder
  • 1½ tablespoons sugar
  • 1 teaspoon garlic salt

Instructions

  1. Brown the meat and chopped onion.
  2. Add tomatoes, tomato juice, water, and spices.
  3. Simmer for about 15 minutes.
  4. Cook and drain the macaroni separately.
  5. Add macaroni to the sauce and cook on low for about 15 minutes.

Tips

  • Chile powder here is the mild blended kind, not pure ground chiles.
  • Meat substitute works if you want a vegetarian version; brown it with the onion the same way.
